Deer Round Steak cut into pieces Pork country Ribs cut up into cubes Both meats seasoned with Seasoned Salt, Garlic Powder and Lemon Pepper, allow to sit for a couple of hours Fresh Pineapple Green Peppers cut up Vidalia Onion cut up Italian tomatoes from the garden cut into pieces Mushrooms Parboiled Klondike Gold potatoes cut into chunks
Skewer everything up, always put a piece of pork next to the deer, deer is to dry to cook without some fat to help, cook on a low heat grill, I light the charcoal and let it burn for a while, I used Sweet Baby Rays Vidalia BBQ sauce when almost done, don't over cook.

Someone hit a possum last night in front of my house.
Is there really such thing as Possum Pie?
The sucker is big. But definately spoiled at this point.

Roadkill is better in the winter, unless it is very, very fresh. Scent gland bursting, and lack of bleeding can be problems. Use koser salt to remove excess blood from the meat. Burst scent glands make for a lost cause.

Do you soak Bambi in anything to remove some of the gaminess?

No, around here they take care of that themselves. From now till they are harvested they are eating primarily corn, cattle don't have it so good, cleans out their system, you are what you eat. I do season them though, a little garlic, seasoned salt and lemon pepper.
When I chicken fry the round steak I prefer to fry in bacon grease. Hamburgers too, the meat is so lean that it won't fry without added fat.
