Spent a couple days in the kitchen. Since it was Good Friday it meant no meat so I made some sushi rolls and sashimi along with a spicy shrimp stir fry. ). Grilled some aspargus. Carmelized some onions and sauted some mushrooms with garlic then deglazed the pans with an apple wine. The roast was perfect. After I sliced it I added the juices to the mixed deglazed pan and then poured it all over the meat.
