Mashed, skin off. With salsa instead of butter.

My bro in law makes the BEST twice baked taters. Love um. those i eat the skin and all and then lick the plate.

Give me boiled new potatoes, skins on, half-mashed with a fork, and slathered with ranch dressing. It gets no better...well maybe with a bottle of Stout on the side.
