I went a bit wild yesterday, and cooked- I love to cook. It's not something I often get to do, as the kitchen is not mine, and my physical issues add to the frustration.
Anyhoo, I wheeled myself to the supermarket, 3 miles away. Packed up the groceries, put anything that'd spoil into a dark bag with ice, and them made the journey home. Bought the dough from the bakery pre-made. 6 balls of it. Hand-kneaded it out with the help of my friend Mary Beth. For the first two calzones- I de-cased some sweet italian sausage, and cooked the meat with a drop of oil and a half can of beer. Drained it, and packed it into two calzones. I then simmered some sliced baby portabellas in beer, and added them. Mozzerella and marinara sauce were added. The next two calzones- I cooked chopped chicken pieces in beer, and strained it. Added that to the calzones. I ran a strip lengthwize of cheddar cheese on one side, mozzerella on the other, split by marinated artichoke hearts. The mozzerella side got a thin outside bead of pesto, a light splash of marinara, and some spinach, sauteed in oil, a splash of beer, and garlic. The cheddar side got a splash of marinara, and steamed in beer broccoli. The final two calzones- Italian coldcuts were laid down- Procuttio, genoa salami, and sweet capicola. A hearty dose of mozzerella, and a thin layer of marinara. All six calzones were folded over, and I brushed them with olive oil. I spriinkled parsley flakes and crushed oregano flakes across the top of them. Popped them in the oven, and simmered some marinara sauce for dipping. Cracked a bottle of wine, and promptly gained 10 pounds. I've got ricotta cheese and cream cheese and plenty more chicken, spinach, sausage, and other goodies to bake a few more this weekend. I'll try them with a bit more pesto, and with the ricotta and cream cheeses, to experiment. But first I gotta get through what I've just cooked. Anyone want to come over for dinner?
