Hickory, Beef ribs, a Smoker, & 5 hours to kill...
Got some ribs given to me friday- someone cleaning out their freezer. Put them on the thaw.... Yesterday, with the ribs fully thawed, I gave them a quick bath in... •worcestershire sauce. once that dried (enough), they were treated to a dry rub (Kansas City inspired) of.... •Sea salt •brown sugar •garlic •onion powder •red chili powder •ancho chili powder •parsley flakes •thyme This morning, I stoked the fire box with •charcoal briquettes (I am out of the Natural Lump charcoal I prefer to use) and later added a handful of •hickory chips (I also soaked more chips in fresh water, to add to the coals via a smokebox, later) ![]() Once the fire was going, I grabbed the rubbed ribs (see recipe above) and placed 'em on my smoker. ![]() I Closed the lid of the smoker, added the soaked-in-water Hickory chips to the fire, and the majik smoke appeared... ![]() So, now the wait begins. Adjusting the vents to keep the smoker around 200-250 degrees (220 is optimal), I've got about 4 to 5 hours to go before ribs are done. What time y'all coming over for dinner? -------------------- What you got back home, lil' sister, to play yer fuzzy warbles on? Pitiful, portable picnic players? Come with uncle & hear all proper! Hear angels trumpets & devils trombones. You are invited!

You let me know next time you fire up that grill. I'll bring the ale.
I bbq a lot out on the back porch. My grill looks exactly like your firebox, but I still manage to cook some might tasty meats. I'm even getting my brisket technique down pretty good. Only problem is I need an entire day to kill. Hmm... I'll be working from home this weekend while my wife studies. Might have to see if Whole Foods got some Buffalo Brisket in as I requested. Mmm.. barbecue. Robert Earl Keene even wrote a song about it. Those are some good lookin' ribs there, Deli. -------------------- |

killer looking ribs my friend. i bet they were mighty tasty too.
thanks for the pics. You know your stuff i can tell. Dry rub on ribs is the only way to go IMHO. -------------------- People will eventually forget exactly what it was you said and did, but they will never forget how you made them feel.... unknown

I like beef ribs too. While not as popular as pork ribs they are usually much cheaper. Nice change of pace. Yum.
